Commonly used in Northern Indian cooking, Amchoor or Mango Powder is created by pulverizing unripe green mango to a fine powder, Amchoor has a bitter, refreshing taste, similar to tamarind.

Cooking Methods

Create your own

Select large, firm, green mangos. Peel and slice into long, thin slices. Spread on a clean sheet and leave in a strong sun for at least 5 hours. When night falls move to a warm, dry area and leave until the strips are crisp and brittle. Using a large pestle and morter smash the strips and then use a grinder until a fine powder is produced. Store in clean airtight jars.
